Chicken curry is a popular dish enjoyed in many parts of the world, especially in South Asia. There are countless variations of chicken curry, but here’s a basic recipe to get you started:
Ingredients:
- 1 kg chicken pieces, skinless and bone-in, preferably cut into smaller pieces
- 2 tablespoons oil or ghee
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 2 teaspoons ginger-garlic paste
- 2 green chilies, slit lengthwise (adjust according to spice preference)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- 1/2 cup yogurt (optional)
- Fresh coriander leaves for garnish
Instructions:
- Heat oil or ghee in a large pan or pot over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
- Add chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
- Add chicken pieces to the masala and mix until they are well coated.
- If using yogurt, add it now and mix well with the chicken and masala.
- Add water as needed to achieve your desired consistency for the curry. Cover the pan and let the chicken cook on medium-low heat until it is tender and cooked through, stirring occasionally. This may take about 20-25 minutes.
- Once the chicken is cooked, add garam masala and mix well. Adjust salt and spices according to your taste preferences.
- Garnish with fresh coriander leaves and serve hot with rice, roti, or naan.
