Tandoori chicken is a popular Indian dish that features marinated chicken cooked in a tandoor, which is a traditional cylindrical clay oven. The dish is known for its vibrant red color, smoky flavor, and tender, juicy meat. Here’s how you can make tandoori chicken at home:
Ingredients:
- Chicken: 4 chicken drumsticks or thighs, bone-in, skinless
- Marinade:
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 1 tablespoon ginger-garlic paste
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon smoked paprika (for color)
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder or cayenne pepper (adjust to taste)
- Salt, to taste
- Cooking:
- 2 tablespoons vegetable oil
- Fresh cilantro, chopped (for garnish)
Instructions:
- Prepare the chicken: Wash and pat dry the chicken drumsticks or thighs. Make a few slits on each piece of chicken to allow the marinade to penetrate.
- Make the marinade: In a large bowl, mix the yogurt, lemon juice, ginger-garlic paste, cumin, coriander, paprika, garam masala, turmeric, chili powder, and salt.
- Marinate the chicken: Add the chicken pieces to the marinade and coat them well. Cover the bowl and refrigerate for at least 4 hours, preferably overnight.
- Preheat the oven: Preheat your oven to 400°F (200°C) or preheat a grill.
- Cook the chicken: If using an oven, line a baking sheet with aluminum foil and lightly grease it with oil. Place the marinated chicken on the baking sheet. Cook in the oven for 25-30 minutes, turning the chicken halfway through cooking. For grilling, cook the chicken over medium-high heat for about 20-25 minutes, turning occasionally until the chicken is cooked through and has a nice char.
- Serve: Once cooked, remove the chicken from the oven or grill. Garnish with chopped fresh cilantro and serve hot with naan, rice, or a side salad.
