Lamb Curry

classic Indian Lamb Curry recipe for you:

Ingredients:

  • 1 kg lamb meat, preferably bone-in, cut into bite-sized pieces
  • 3 tablespoons oil or ghee
  • 2 onions, finely chopped
  • 4 tomatoes, chopped
  • 2 teaspoons ginger-garlic paste
  • 2 green chilies, slit lengthwise (adjust according to spice preference)
  • 1 teaspoon cumin seeds
  • 2 cinnamon sticks
  • 4 cloves
  • 4 green cardamom pods
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 cup yogurt
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil or ghee in a large pan or pot over medium heat. Add cumin seeds, cinnamon sticks, cloves, and cardamom pods. Let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
  4. Add chopped tomatoes and cook until they become soft and mushy.
  5. Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
  6. Add lamb pieces to the masala and mix until they are well coated.
  7. Add yogurt to the lamb and masala mixture. Stir well to combine.
  8. Cover the pan and let the lamb cook on medium-low heat for about 40-50 minutes, or until the meat is tender, stirring occasionally. Add water as needed to prevent the curry from sticking to the bottom of the pan.
  9. Once the lamb is cooked, add garam masala and mix well.
  10. Garnish with fresh coriander leaves and serve hot with rice, roti, or naan.
